Gordal Olives 
with Herrings

Gordal olives
Diced pickled herring
Orange segments and their juice
Chopped peeled tomatoes
Chopped sundried tomatoes
Extra-virgin olive oil
Julienned Spanish onion
Finely chopped garlic shoots
Finely chopped chives

Combine all the ingredients in 
a bowl and mix well, then serve.

TIP: Serve this dish as soon as it’s prepared. You could replace the herring with anchovies or smoked salmon.
