Gordal Olives with Tomato, Capsicum, Coriander and Cumin

Gordal olives
Chopped red capsicum
Chopped green capsicum
Chopped onion
Vine-ripened tomatoes
Olive oil
Garlic
Fresh coriander

Sherry vinegar 

Ground cumin

Process all the ingredients except 
the olives in a food processor to 
a smooth paste. Add a little of the liquid from the olive jar and process to combine. Serve with the Gordal olives.

TIP: The dressing can be mixed 
with the olives or served separately 
as a dip.
