Black olives
Diced aged Manchego
Red currants

Combine the black olives, 
Manchego and redcurrants in a bowl. Scatter with cinnamon, add a dash of Sherry and stir gently. Set aside for 20 minutes 
for flavours to develop, then serve.

TIP: Pacharan, a Spanish liqueur flavoured with sloe berries, can be used instead of Sherry in this recipe.
