Ingredients

Black olives

Garlic
Paprika
Cayenne pepper
Oregano
Dried orange peel
Thyme
Sea salt flakes
Vinegar

Pound the garlic, paprika, cayenne 
pepper, oregano, dried orange peel, 
thyme and a little salt in a mortar 
and pestle. Add vinegar to taste, then thin dressing with a little 
water. Combine with black olives and serve.

TIP: Scatter with a little julienned 
orange peel just before serving.
