Green olives
Olive oil
Soy sauce
Finely grated ginger 

Finely chopped chilli
Finely grated lemon rind
Canned clams or cockles
Thinly sliced parsley

Combine the olive oil, soy sauce, ginger, chilli and lemon rind in a bowl. Add the green olives 
and stir well. Add the clams and 
pepper and toss gently to combine 
Refrigerate for at least an hour 
to allow the flavours to develop. 
Scatter with parsley and serve.

TIP: Prepare the day before and keep it in the fridge, adding the parsley just before serving.
