Black Olives with spicy orange dressing


  • Black olives
  • Garlic
  • Paprika
  • Cayenne pepper
  • Oregano
  • Dried orange peel
  • Thyme
  • Sea salt flakes
  • Vinegar


  • Pound the garlic, paprika, cayenne pepper, oregano, dried orange peel, thyme and a little salt in a mortar and pestle.
  • Add vinegar to taste, then thin dressing with a little water.
  • Combine with black olives and serve.

TIP: Scatter with a little julienned 
orange peel just before serving.
