Gordal Olives with tomato capsicum coriander and cumin


  • Gordal olives
  • Chopped red capsicum
  • Chopped green capsicum
  • Chopped onion
  • Vine-ripened tomatoes
  • Olive oil
  • Garlic
  • Fresh coriander
  • Sherry vinegar
  • Ground cumin


  • Process all the ingredients except the olives in a food processor to a smooth paste.
  • Add a little of the liquid from the olive jar and process to combine.
  • Serve with the Gordal olives

TIP: The dressing can be mixed with the olives or served separately as a dip.
