TIP: Prepare the day before and keep it in the fridge, adding the parsley just before serving.
Showy Green Olives
- Green olives
- Olive oil
- Soy sauce
- Finely grated ginger
- Finely chopped chilli
- Finely grated lemon rind
- Canned clams or cockles
- Thinly sliced parsley
- Combine the olive oil, soy sauce, ginger, chilli and lemon rind in a bowl.
- Add the green olives and stir well.
- Add the clams and pepper and toss gently to combine Refrigerate for at least an hour to allow the flavours to develop.
- Scatter with parsley and serve.
